Pizza Dough

Recipe for ten 8oz dough balls

2.4 lbs bread flour
0.6 lbs Semolina
2 lbs (pints) H2O
1 T Sugar (or equivalent)
2T Kosher Salt
2t Instant yeast (or equivalent - 2 pkgs active dry)

Dissolve sugar and salt (and active dry yeast if using) in water. Add semolina and mix slightly. Add flour (with instant yeast ((if using))mixed in) and work into a rough dough in a bowl. Allow to rest for a few minutes then work it on the counter for two or three minutes (add a bit more flour if it seems really sticky). Put it in an oiled bowl and let it double. Cut it into 10 equal pieces and form them into balls. Let those rest in the fridge (covered) overnight and pull them out about an hour before you want to makadapizza.
