Don’t like leftovers? Don’t know what to do with all those carrots? I cooked way too much rice! Why did I buy dried beans? Sometimes you make poor decisions at the grocery store. Sometimes you just end up with a bunch of bits and bobs in your frig and you don’t know what to make.
There are several recipe generator websites out there where you can input what you have in your frig, and it will generate different recipes out of what you have. You can check out two of them here

Food is expensive these days. A lot of families do not and cannot afford to throw away food. As we learned above food waste in households is one of the biggest places food waste happens. I for one hate food waste and through the years I have come up with several great recipes that we love. It helps me clean out the frig, especially my veggie drawers
Veggie Enchiladaes
Any (almost) veggies you have in your frig.
Carrots, onions, spinach, celery, tomatoes, garlic, brocolli, mushrooms, asparagus, cauliflower, peppers, green beans, corn, kale, zucchini, cabbage. You get the idea!
Shredded Cheese (preferably cheddar, but other types work as well)
Flour Tortillas (8” work well)
1 Can of green or red enchilada sauce (or make your own)
1 Can of refried beans
Use a 9 x 12 glass pan, spray with Pam or other non stick spray. Preheat your oven to 375
Chop up your veggies into bite size pieces. You want to have about 2 cups of chopped up veggies. Saute them in a pan with olive or any light kind of oil. Set aside
With each tortilla, spread about 1/3 cup of refried beans onto the tortilla, place some of your sauted veggies on top, then spread cheese on top of that. Roll it into a big cigar looking enchilada and put it into the pan. Continue with the next 6-7 tortillas or until gone.
Open the contents of the enchilada sauce and pour over each of the enchiladas . Cover with foil and pop into the oven for 25 minutes.
I like to serve with guacomole and I substitute Greek yogurt for sour cream (healthy option!) and some jarred salsa (or make your own!)

My favorites are carrot, onion, spinach and mushroom (but if you don’t have one of those items, substitute! Get creative.
Another fav combo is zucchini, onion and peppers
